These delicious sea scallops are harvested in the waters off the coast of New England and packed dry (or without phosphate preservatives). The sea scallop is larger than the bay scallop and has a sweet, briny, flavour — there is a running debate over the flavour of sea scallops vs. bay scallops with advocates on both sides. Because of their larger size, sea scallops really shine as a solo menu entrée; whereas bay scallops tend to be incorporated into dishes as a component.
